Abuelita’s asado de plaza
October 4, 2009 at 8:52 am | Posted in Dinner | 13 CommentsThis meal is 100% authentic Mexican food straight from the streets of Mazatlan! (or from abuelita’s kitchen!). I basically observed the production of this meal, but it must be documented for posterity!

AND This meal is my 100% favorite comfort food in the world. Warm tortillas with tender and delicious meat and potatoes, and some homemade tomato sauce (which grandma calls salsa) that came from my daddy’s garden!
Here is a shot of the meat and potatoes combined together and frying up a bit after being cooked by themselves. Love my aperture abilities!

Ingredients:
8 russet potatoes
~4.5 lbs Eye Roast (cut in half)
Vegetable Oil
Garlic
A slice of onion
S&P
And some tortilla balls that I rolled up waiting to be pressed and cooked. I think I made about 50 of them! We have a lot of people in my familia…

Directions:
1) Boil roast in 4 qt stock pot and cover with barely cover with water + 1 tbsp salt, bay leaf, 1 tsp celery seed and cook until it’s tender- 2.5 – 3 hours.
2) Boil potatoes in 7 qt stockpot in the same water (if time permits) + 2 tbsp salt (but not if you used the other water) for 25 minutes and check to see if they are fork tender.
3) Cool potatoes to room temperature, peel them and cut into ½ inch squares.
4) Same as the potatoes, allow the meat to cool to room temperature, remove the fat from the outside of the meat, and then cut into ½ inch squares.
5) Mix potatoes and meat together in a large bowl. Add 4 teaspoons (or more to taste) total of salt and pepper gradually while mixing and taste as you go along.
6) Add 1 cup of vegetable oil to a large frying pan and sauté 2 cloves whole garlic and the slice of onion until it browns on medium heat. Remove the garlic and onion slice and add 1/2 of the meat and potatoes and sauté until the potatoes are slightly browned, stirring occasionally and until everything is hot! Repeat cooking the remaining half of the meat and potatoes with another cup of oil, garlic and onion.
7) Serve with tortillas (made with masa and water) and homemade salsa (recipe to follow later!)
Serves a crowd.

Here is a shot of the stove with everything nice and hot. The salsa, meat and potatoes, and homemade beans with the chef herself at work!

We use a big griddle to cook a whole bunch of tortillas at once. Sooo delicious when they are fresh.

wow that all looks so good, so much fun, and a lot of work! haha looks like it made for a good weekend! since you seem to know just about every hot spot in town i thought i would direct this question of mine your way….every monday i usually go to the evergreen cafe on cold spring to do homework for like hourssss. its my only day of the week i am done classes at a reasonable time (damn labs! ahha) and so i love to go somewhere quite and just do my homework in a nice setting. evergreen has free wifi so its perfect. but i was wondering if you know of anywhere else (cafe or whatever really) in the area that i could go to do my homework…preferably with wifi. if you dont that is cool i just thought i would shake things up and do some exploring…as much as i love evergreen cafe its getting monotonous!

Actually Christina, I have NO IDEA about free wifi in this town. I have gotten some coffee at the firehouse place in canton and there were a ton of people hanging out with their computers in there, but I’m an at work or at home computer person! But maybe Keswickian (see my blogroll) has an idea! She is a librarian at your school! You should go find her and meet her!!

The Daily Grind in Fells Point has free wifi. There are always loads of people with laptops sipping coffee in there on any given day.

I actually ended up at Peace and a cup of joe on pratt street today….really great place! and they have wifi. I just looked up the daily grind- that place looks fantastic- that will definitely be next week’s destination…thanks tracy

Wow to see a lil abuelita in the kitchen brings me to the memory of my lil grandma she just passed on two years ago at the young age of 90. Everything i know about cooking is thanks to her loving caring ways in the kitchen. She always told me if you are having a bad day do not cook,only cook if you are in the mood to cook and happy to cook otherwise your food will show what kind of a day you had. I always thought how true it is. Her and I must be pretty happy persons because our food pretty much tastes delicioso all the time.
