Mexican Pancakes
May 4, 2009 at 5:20 pm | Posted in Brunch, Dinner | 7 CommentsTuesday was a busy one at work and instead of making a chicken and rice meal, I decided to go real easy and make the Hall Family breakfast standby: Mexican Pancakes! So yes because these babies are so delicious and so easy I’m thinking I need to make breakfast for dinner more often!

So I’m thinking you might be confused as to the name of this dish- well my grandma is from Mexico and you may or may not know that many of the sweets of Mexico have a French origin- so these are basically thick and eggy crepes! And Abuelito calls them Mexican Pancakes so mexican pancakes they will be!

Makes enough for 3!
Ingredients:
6 eggs
1 cup flour
1 cup milk
1/2 cup sugar
a couple tbsp of butter, room temp
more sugar for dusting
Directions:
Heat up nonstick pan to medium. Spray with a bit of vegetable oil. Pour enough batter to coat the pan and cook for about 1 minute. When almost done cooking, spread 1/2 tbsp of butter and 1/2 tbsp of sugar along the length of the pancake! Roll up and serve!

These are what life is made of. You know, Grandma’s mother was of French origin..and Grandma said she is one who taught her how to make these crepes…umm..I mean Mexican Pancakes. Lots of butter and lots of sugar inside. Super delicioso.

my grandma and I used to make these all the time. They are so yummie, thank you for posting the recipe, I couldn’t remember the amounts of the ingredients.
