Broccoli, Chicken & Pine Nut Couscous
May 15, 2008 at 8:39 am | Posted in Dinner | 1 CommentLaura has been dying to try couscous, so we got a pine nut flavored version from Wegman’s on Sunday. I decided to pair it with come chicken pieces and our good old standby baked broccoli. This was quick and real tasty (as I ate it in less than 3 minutes!…I know-not good to gulf food…but I did run 4 miles!)

Hopefully Laurita’s leftovers will taste just as good tomorrow, when I am out with my mentor again!
Ingredients:
2 chicken breasts, cut up
evoo
1 box of pine nut couscous
head of broccoli pulled into small stalks
s&p
Directions:
1) Preheat toaster oven to 375, coat broccoli with evoo and s&p. Cook for 25 minutes!
2) Heat up 1 count evoo in nonstick over medium-high heat, season chicken with s&p and I added some paprika (not that I could taste it anyway…), cook chicken for about 8 minutes, flipping the pieces halfway.
3) Heat up 1.25 cup chicken stock, splash of evoo and “flavor-packet” (I feel like a cheat using a flavor packet! oh well! It did have pine nuts in it….) until boiling. Pour in couscous and remove pot from heat. Cover and allow to sit for 5 minutes.
4) Combine all ingredients together and chow down!
